Plant-Based Truffle Bites

Redd Salted Caramel Cashew Almond Bee Bites

INGREDIENTS

  • Salted Caramel Redd bar (save the other half for garnishing)
  • 1 cup raw, unsalted cashews
  • 3/4 cup raw, unsalted almonds
  • 1 cup dates, pitted (around 10)
  • 1 tsp hemp seed
  • 2 tsp chia seed
  • 1/4 nut butter
  • 1/4 cup cacao powder (to taste)
  • 1-2 tsp melted coconut oil
  • 1 tbsp cacao nibs

INSTRUCTIONS

Blend ingredients together for 3 minutes in a food processor, or until the ingredients come together in the bowl. Roll into balls. If you’re feeling decadent, you can also coat some in cacao powder!

Cashew Cream:

  • 1 cup cashews (soaked preferably overnight)
  • 1 date
  • 1 tsp strained raspberry or beet juice for color

After the cashews have soaked, drain the soaking water and put them in a food processor with around ¾ cup water  – enough so they are just covered. Add the date and coloring and blend. If you’d like thicker cream, replace some of the water with nut milk.

Use a piping bag to pipe the cashew cream onto the bites. For a sweet final touch, use a small cookie cutter to cut the Redd bar into hearts to garnish your truffles!
